The bull has been source of inspiration for many artist. While it is very detailed and lifelike, it is not intended to be super realistic and anatomical proof. It is artistic deformation of the idea of the bull as a metaphor. The way the head is composed to the body, it is like a wave of muscles coming out of nothing.
