Those who have visited Turkey at least once have certainly tried the Turkish bagel - simit. Sim appeared in the XIV century in the Ottoman state. For the first time, small bagels of simit were baked for caravanserai travelers. A bagel has become a kind of popular snack, it spread instantly in places of public use: in schools, hospitals, canteens, marinas, train stations. There was no single recipe for simit in those days, each baker prepared it according to his own recipe. But since the simit got on the table to the sultan, a single recipe appeared, which was subsequently taught to bakers. There is a legend about cooking simit. During the reign of Sultan Suleiman the Magnificent, the ranger Pasha Shamsi was in the kitchen. Once he saw a sesame bag in one of the women in the kitchen. He tried them, he liked them very much. Then he ordered a study on the benefits and harms of sesame. When the obvious benefits of the grains became clear, he demanded to create a new dish that would use sesame seeds. So there was a sim. Pasha Shemsi ate simits for 7 days, without fail, drinking hot tea. A series of experiments were conducted on the number of ingredients and the shape of bagels, but in the end a bagel known to this day around the world called "Simit" was born. By the way, Sultan Suleiman was a big lover of tea with the Sims. There were stringent requirements for preparing simit. One of these requirements was a certain color of the product - the color of ancient Ottoman gold. This color could be achieved if grape syrup - pekmez was used and that a certain temperature was maintained during kneading.
